Pecan Chew cookies

I made these today and they were sooooo good! Give them a try!

Pecan Chews

Preheat oven to 350 degrees F., rack in the middle position.

1 cup butter
3 cups brown sugar
4 eggs, beaten
1 tsp. salt
1 tsp. baking soda
1 Tbsp. vanilla
2 cups finely chopped pecans
4 cups flour

Melt butter and add the brown sugar. Mix well and let cool. Add beaten eggs and mix. Add salt, baking soda, vanilla, and nuts. Mix well. Add flour and mix until flour is thoroughly mixed in.

Form dough into walnut-sized balls (I used a soup spoon and just dropped these on the cookie sheet) with your fingers. Place them on a greased cookie sheet. Press them down with a spatula (spray with Pam first).

Bake at 350 degrees for 10 - 12 minutes. Let cookies set up on the cookie sheet for 1 minute, then remove them to a wire rack to finish cooling.

Yield: 8 - 10 dozen
